Research Progress of Protein-Based Bioactive Substance Nanoparticles

Bioactive substances exhibit various physiological activities—such as antimicrobial, antioxidant, and anticancer activities—and have great potential for application in food, pharmaceuticals, nutraceuticals. However, the low solubility, chemical instability, bioavailability of bioactive limit their food industry. Using nanotechnology to prepare protein nanoparticles encapsulate deliver active is a promising approach due abundance, biocompatibility, biodegradability proteins. Common protein-based nanocarriers include nano-emulsions, nano-gels, nanoparticles, nano complexes. In this review, we give an overview nanoparticle fabrication methods, highlighting pros cons. Additionally, discuss applications current issues regarding utilization Finally, provide perspectives on future development directions, with focus classifying functional properties.
